Penne all’Arrabbiata

Wow. Just wow.

This is one of the tastiest dishes I’ve probably ever made, the ingredients are simple but when brought together into one recipe they compliment each other perfectly… the crushed garlic with torn basil, slices of streaked bacon and lots of fiery red chilli all heated together with tomatoes, roasted red pepper and a splash of balsamic vinegar is just de-li-cious!

I’d love to take credit for the creation of this recipe but it’s actually been developed by the lovely folks at HelloFresh, using their new Flavour Generator which has just been launched this week. The idea behind it is to help you decide what to make for dinner if you’re stuck in a rut or just fancy a change, you choose from the type of food you like and the style of flavour you’re craving and then hit the button… and voilà, up pops a selection of recipes for you to choose from.

I chose ‘Italian’ and ‘Spicy’ (two of my favourite words!) and the flavour generator picked basil and chilli as part of my recipe selection. As soon as I saw the penne all’arrabbiata, my mind was made up! I found it simple to use and the instructions on the page were easy to follow. I also thought the serving size selector was a great tool too, as you can decide how many people you’re cooking for and it will automatically update the ingredient list to suit.

If you’re looking for some inspiration on what to cook tonight, tomorrow or this weekend, definitely give the Flavour Generator a try and see what takes your fancy. I’ve already seen a couple more recipes that I’ll be testing out, and if the Penne all’Arrabbiata is anything to go by I’m in for a treat!

Chocolate Hazelnut Cookies

Cookies are one of my favourite treats to make when I’m craving something sweet, they take about 20 minutes from start to finish – it’s little wonder that I don’t make them every single day!

Hazelnut and chocolate chip is a classic combination, and these cookies are delicious eaten straight out of the oven whilst they’re still warm… I’ve made this recipe using half ground hazelnuts and ground almonds, as that’s all I had in the cupboards, but you could easily make them completely with just ground hazelnuts (I imagine they would probably taste even better!)

You will need:

  • 75g ground hazelnuts
  • 75g ground almonds
  • 40g of dark or light brown sugar
  • 40g of dark chocolate chips (I used a mixture of dark and milk – substitute for vegan chips if needed)
  • 1/2 tsp of baking powder
  • 2 tbsp of coconut oil
  • 2 tbsp of milk (I used almond)

How to make:

Preheat the oven to 180°c (fan) and line a baking tray. In a mixing bowl add all of the dry ingredients and stir together. Melt the coconut oil by heating in a pan or pop in the microwave for 60 seconds until dissolved. Pour into the mixing bowl with the milk and stir until a sticky dough ball forms. Using a spoon divide the mix into 8-10 balls and flatten in your hand, pop on the baking tray and bake for 15 mins. Leave to cool a little and then enjoy!
